13. HILL FARM - Made by a Dutch lady who is married to an English man and living in Wales! A multicultural wheel of mature Gouda style cheese with a peppery finish. UNP
12. WESTCOMBE RED - Like a big, orange sunset on your plate, this cheese goes down a treat. Made by the cheddar boys near Shepton Mallet this is a more mature version of a Red Leicester. UNP
11. SWEET CHARLOTTE - Sweet she is, girlie she ain't, this cheese can be holey but isn't no saint! Made just for Country Cheeses to an Emmenthal / Jarlsberg type recipe. Mature and nutty. P. V
10. SINGLE GLOUCESTER - This is the lesser spotted Gloucester and a protected cheese. Jonathan Crump's organic example is cream and piquant and is made in Gloucestershire using the milk from Gloucester cows. Just as it should be. UNP. V
9. MATURE CAERPHILLY - Gorwydd based Todd Trethowan makes such a fine example of this classically Welsh cheese that it makes a worthy exception to our predominantly Westcountry collection. Creamy and smooth on the outside and crumbly and light on the inside. Stripy is alrighty with us! UNP
8. RUSTIC - Another triumph from Debbie at the Sharpham Estate. This is a semi - hard cheese made from the estate's own Jersey cows' milk. The result is subtle and very, very rich. UNP. V
7. YARG - A covering of nettle won't test your mettle with this gentle cheese. We think this is Cornwall's most famous export after the pasty! P. V
